it helps some times The "via mybookingapp.com" doesn't affect Deliverability, it only affects the user experience IF they didn't recognize the brand. I don't think is the case.
Yes, it's good practice isolate traffic and reputation, but sometimes it's not the right thing to do and the best solution is to use shared IPs.

fixed the issue. Will look into that further I'd in general be pessimistic about the IP reputation of platform-as-a-service type offerings. Testing Google AppEngine is on my to-do list, but I've there's been much talk about Amazon EC2 presenting a real problem -- these products are not very efficient preventing use by spammers, and reputation is taking a hit.
As for the practical steps of setting up outbound email, Jeff Atwood has a very nice and nearly comprehensive article on his blog.

seems to work fine You could create your :data param as an array of JSONs, like so:
:data => ['{ "name" : "Foo Bar", "email" : "foo@bar.com" }','{ "name" : "Jon Snow", "email" : "jon@snow.com" }']

wish of those help 1) Yes - whitelabelling will replace the sendgrid.me with your own domain.
You can also setup multiple domains inside SendGrid and assign each to a subuser. That will get you one SendGrid account, with multiple whitelabelled domains and separate sender reputation for each.

I hope this helps you . Yes, you can. You can pretty much have as many domains as you'd like. You can do that by adding multiple hosts. My example has different hosts on the same domain, but you can have different domains there.

I'm not certain if by "It is not practical to ask each customer to verify their own domain using DNS verification." you mean a) verify their domain with the ESP (Email Service Provider, i.e. SendGrid, Mailgun, etc.) or b) ensure each customer has a proper TXT SPF DNS record that allows the ESP being used to send email on the domains behalf.
